Who doesn’t love «pizza-flavored», especially applied to breakfast?
In this case, we’re talking sausage, pepperoni [1], olives, and tomatoes. But feel free to customize [2] the add-ins [3] to suit your friends, using either one big cast-iron skillet [4] or up to four small ones:
-
1 mild or hot Italian sausage
-
9 large eggs
-
1 teaspoon dried basil
-
½ teaspoon each kosher salt and pepper
-
2 tablespoons olive oil
-
20 thin slices pepperoni, cut into strips
-
1 cup shredded mozzarella cheese
-
6 tablespoons grated parmesan cheese 1 can sliced ripe black olives
-
½ cup cherry tomatoes, cut in half
-
4 green onions, thinly sliced
1. Squeeze [5] sausage from casing [6] into a large cast-iron skillet [7] and cook over medium-high heat on a camp stove until browned, breaking meat into small chunks, 4 to 5 minutes.
2. Meanwhile, in a large bowl, whisks eggs, basil, salt, and pepper to blend well.
3. Reduce heat to medium. Add oil and pepperoni to skillet and cook, stirring [8], until pepperoni gets very lightly browned, about 30 seconds. Pour in eggs and cook, stirring occasionally, until they are halfway set, 1 to 2 minutes. Reduce heat to low and stir in remaining ingredients. Cook, stirring a couple more times gently until cheeses melt and eggs are set, 2 to 3 minutes more.
